Only about 10% of plants produce aromatic compounds

Really. The group of plants that produce aromatic compounds really is that small.

Essential oils are part of a very large group of compounds we call secondary metabolic compounds – primary compounds are those necessary for plant growth, proteins and carbohydrates.  I think of the secondary metabolic compounds as what allow the plant to be in it’s environment, these are how the plant responds and part of defense and attraction. Their function is immunological and biological. We extract them and use them for our own benefit. Essential oils are so easy to use in an airborne fashion to defend against pathogens and to be attractive.
